Açorda is a typical dish (soup) of the northern part of the island. This soup is specially for cold days. Many locals are fond of this specialty.

 

Ingredients:

 

8 dl water

2 table spoons of olive oil

3 garlic cloves, crushed

4 eggs

Thyme, a small bunch

Salt to taste

Red pepper to taste, powder or a tiny bit fresh

Dry bread, or leftover baguette from yesterday

 

 

Preparation:

 

Use the whole bunch of thyme, stem and all. In a pot, put water, olive oil, garlic, thyme, salt and red pepper. Bring to a boil. Then, crack the eggs one by one directly into the pot. Let simmer for 5-7 minutes.

Finally, cover the soup with bread in small pieces.
